Insta Saturday // Week in Review






This week was filled with delicious new foods! In an effort to rule out some food intolerances, I've been cooking gluten free, grain free, dairy free, and often vegan, too! That means lots of new interesting meals (and so much easy deliciousness! Who knew eating clean was so easy??)

- We had Saturday brunch with our dear friends Erin & Jesse at the Ole' Farmhouse Cafe in town. It's such a quaint little place, especially for breakfast and some gluten free french toast!

- On Sunday we went to my Grandma's 70th birthday party / Easter event, and I brought a massive taco salad, that got completely devoured and licked clean.

- Oliver and I were invited to his very best friend Jadyn's ballet recital, so he showed up in a little suit jacket, with a sunflower to give to her after her performance. She was so cute, dressed in a little bumble bee costume! And Oliver was absolutely darling when he presented the flower to her. The whole audience oohed and aahed at him and is cuteness.

- It snowed again. And blizzarded. And I was pretty bummed about it, but not as bummed as I thought I would be. I know it will melt.

- The kids got their first Easter baskets of the year from their Grandma G, and ate way way way too much chocolate.

- I made vegan taco salad, with walnut "taco meat" and cashew "sour cream" and it was completely delicious!

- Oliver learned how to stand on his head completely by himself, and was very very proud.

- I made vegan cauliflower "hot wings" and the recipe was terrible. Never ever again. Will have to try a different recipe next time. Way too spicy, and didn't crisp up as much as I would have liked.

- Oliver and I had a date-night out for supper, and did a little grocery shopping together. That kid is just so sweet and delightful when he's on his own. Just charming and polite. I'm so proud of the kid he's becoming.

- I went through the boys clothes and put away a bunch that Theodore is too big for now *tear* and moved a lot of Oliver's too-small clothes into Theodore's drawers. What is going on??

- I made avocado double-chocolate cookies that are less than 100 calories a piece, and you guys, they rocked my world. They are so delicious, and you'd never know there was avocado in them. They tasted like fudgey chocolate cake. Game changer.

- I also tried my hand at some grain-free (mostly nuts and seeds) granola, and it also turned out completely amazing. Our house smelled incredible, and still does!

- We went to my mom's on Friday so she could keep an eye on my kiddos so I could have some more doctor's appointment fun, and have MORE blood taken, and pee in a cup AGAIN. That part wasn't fun, and no answers were found yet again, but we had a delicious supper at her house afterward!

I'm anticipating a week filled with sunshine, snow melting, and awesome family time as we move into April. I'm hoping my pain and illness is suddenly relieved, and the sun shines in every area of my life this week!
